Rice cultivation at the site of Cascina Venera in Piemonte's fertile Po River Valley can be traced definitively back to 1781. This estate was the site of the 1949 Academy Award nominated film, Riso Amaro (bitter rice), which told the story of the women who worked in the rice paddies. The movie starred legendary beauty Silvana Mangano. Trivia Note: Silvana and director Dino De Laurentiis are grandparents to Food Network star Giada De Laurentiis. Since 1992 the farm has concentrated on quality, not quantity, setting the standard for superlative Italian rice. Cascina Venera is one of a small number of vertically integrated Italian rice producers who control all aspects of production. The carefully chosen seeds are saved to preserve the best of the pure Italian rice strains. The rice is grown without persistent chemicals. An optical separator is used to examine the rice and discard any imperfect grains. This extra care results in a product that is absolutely consistent, for flawless rice dishes every time. We're proud to be one of the first retailers to bring Cascina Venera rice to enthusiastic cooks in the United States. This grain is simply the less processed, un-milled version of Carnaroli. Any whole grain is known to be more nutritious than more processed versions, and brown Carnaroli rice is no exception. Brown Carnaroli makes exceptionally nutty, full flavored versions of risotto and rice salad. In risotto, it becomes creamier than you might think, but don't expect a risotto made with brown rice to be quite as delicate.
